Im curious if I make a separate html page with only text on it and use that as my text inside of an iframe for my pages, will that text count as text for that page when SE's crawl my page?

It is not the smart way to do text for se's or for customers. It may or may not be read - but it also may be read in it's own page and not on the page you want it read on.

The text inside of the frame will not be read but any other text you add to that page will be. Using your titles and meta data to describe the page will help you and if you size the frames so that you can add text in other parts of the pages, that text will also be read. I have several sites that I have been playing with lately doing this very thing. It works well. Just make sure you place other text in the pages.
