    domain name and keywords

If we want the best ranking in Google, how important is it for our domain name to include our principal keyword ?

ie . . . . if we are a florist, should we choose a domain name including florist (say, jims-florist.com) in preference to one that doesn't ? (say, jimsplace.com) ?

Your domain name is one of many factors. Google does take note - and having the word 'florist' in your domain name helps identify you.

I would use 'florist' in the name, and also your location if you sell flowers mainly in your local area.
Your name could be 'jimsfloristmytown' (mytown being your area.)

If possible, don't use a hyphen in a business name. (Yes I use one in the domain name in my sig - but it's not a business.)
