    Sheri has cooked us up a mess of chicken and rice, green beans, biscuits, and home grown watermelon ... YUMMY!

      LOL bill,

      We always fix enough expecting guests. With all of our kids we never know if one of them will bring a friend in our not. There is plenty come on ova. While ur here you can teach me how to build a good site. :o)

          I'm more worried about what I'm having tonight - six months ago I had great success with a spagetti dish using scallops, prawns, ginger, lemon grass and chillies. Foolishly I invited friends over and said I'd make it again!

          Now I'm sitting here trying to remember what I put in and how I made it! Going to be a bit of an experiement this one!

          Oh well, if I get enough drink in perhaps no one will notice what they are eating!

                Well we're strictly a sandwich in the evening person...our main meal is at lunch...so for lunch ...lets see we had a nice Jamaican stew chicken, tomato dal, stir-fried okra indian style and plain yougurt (a staple in every indian home eaten at the end of every meal).

                BTW Brent...I even wrote a quirky little poem about southern food cause my best friends from Georgia...lol

                I'll have to see if I'm brave enough to post it...lol...it's not that good...lol

                  The meal went really well - I thought I overdid the chillies, but in the end it turned out ok. The recipe?

                  Well....

                  A pile of grated fresh ginger (about 2 heaped tablespoons)
                  a pile of chopped coriander (Again, about 2 heaped tablespoons)
                  2 stalks of lemon grass (do you call them stalks?)
                  2 small chillies very finely chopped
                  1 small red onion again finely chopped
                  lots of olive oil

                  Scallops
                  Prawns
                  Mussels (ready cooked)

                  Chuck all the above in a frying pan (except prawns and mussels) and fry for about 8 minutes. Add prawns. Leave to simmer. Heat mussels separately.

                  Cook spaghettii.

                  Put spaghetti in a pasta bowl, pour on mixture from frying pan and stir in well (Oh and take out the lemon grass stalks). Decorate the top with the mussels.

                  This worked well by cooking in advance (except for the spaghetti), then whilst guests are relaxing with wine after the starter (which was stuffed mushrooms by the way), reheating the prawns and scallops mixture. and completing the dish then.

                  Serve with plenty of wine so if it has gone wrong no one will notice.

                  Follow with more wine and the desert (melting chocolate puddings in this case) And a little more wine ....

                  Wake up next morning with one hell of a headache!! Take two aspirin!

                    That sounds like a good recipe. My wife would probably love it. I dont eat mussels myself, but she lurvs them :o)
