Freelancers Trustworthy?

I have bids on a project and have been replying with a private message, but the bidders aren't getting back to me. It just got me thinking...are these guys for real? There is one bidder using several websites as examples but how do I know he's for real?

Do I have to pay them first and wait for the work to be done? How does the transfer of funds for service work here?

Can somebody help explain?
