Plan for moving a domain

Hi, I have a domain hosted by another company, which I would like to move over to Voda in the near future. I can't transfer the structure (long story), so I need to redo the site before moving it. I was thinking if I added a subdomain, then build the site as I want it on the subdomain, then when it is done I could add an add-on domain and point it to the directory where the subdomain is. Then I just need to change the name servers at my old host and it should work. Is my thinking correct on this? I want to be sure before I do a bunch of work. Thanks.
