Un-publish pages?

Sorry to be a pain - it's me AGAIN! I just want to get this all straight in my head!
When I publish my first page - and I hate it and need to amend it - how do I un-publish it? Easy question! Please don't ask me to watch a tutorial - I can't find the answer there!

The best thing for you to do is to delete it straight off the server.
