I haven't been in the builder for awhile but in the text element there should be a link tool in the toolbar that lets you link text to a website or email address. Sorry can't be more specific.

When you highlight the text and right click on it you have a range of options one being link. Click on this to open the link options box. On the type of link, which by default is http://, you can click on this to change it to "mailto" and then type in the email address in the link box.

Not trying to hi-jack the thread, but is it possible that when the email page opens, it has the destination email address already added?

Just trying to make it fool proof!
