How much information should I collect from users registering to my free website? Name, address etc?
Bear in mind that I do not want to turn them away by asking for too much info.

I would start with Full Name and an Email Address. If you are sending out a sales newsletter, you can ask for their address or whatever later if they want to buy whatever you are selling.
