Creating a Sub Product Category

I am having trouble creating a sub product category in Soho shopping cart. I have no problem creating main categories, but what if I want to place an item into a sub category of a main category? What is the process for doing this?

ex:

Cookbooks
Kitchen Appliances>
Cutlery>...........place product into the sub category!
Recipes
