1) How do I removed the "untitled page" text for my banner - using BlueVoda
2) Will a banner work as a header. I don't see any other way to create a website header?

On your page that you make in blue voda, if you right click anywhere and select page properties, you will see a line called Title - this is where you add a title to your page, you will see it because it now says "untitled page" you should rename it here, something relevant to the page content ....

A banner will work as a header. You can go to flamig text and create yourself an image ... you could make a header in photoshop ...

What kind of header were you needing? What is your site about??
